Ingredients: 3 Tablespoons butter 1 Onion chopped 6-8 Large potatoes, peeled, and chopped 2 Cups milk 2 Chicken stock cubes dissolved into 2 cups hot water 125g Blue cheese, crumbled Salt to taste Pinch cayenne pepper 125ml Sour cream
Method: 1. Heat the butter and fry the chopped onion until soft and translucent 2. Add the potatoes, milk, dissolved chicken stock and cook over low heat until the potatoes are soft. 3. Liquidise the mixture and mix half the crumbled cheese with the soup. 4. Flavour to taste with salt and cayenne pepper 5. Mix half of the blue cheese with the soup 6. Spoon into individual serving bowls 7. Top each serving with a dollop of sour cream and a spoonful of crumbled blue cheese 8. Serve hot!
