Ingredients: Avo and bacon: 1 avocado, cut into 1cm cubes and drizzled with lemon juice. 150g rindless bacon, chopped and fried. Cottage cheese and macadamia: 200g pineapple-flavoured chuncky cottage cheese 50g macadamia or pecan nuts, chopped 1 sliced peppadew (optional) Smoked mackerel and sour cream: 100g smoked and peppered mackerel, flaked 100ml sour cream or plain yogurt 15ml chopped chives Pesto and parmesan cheese 30ml pesto 25ml grated Parmesan cheese Mascarpone and tapenade 200ml mascarpone cheese 30ml tapenade (olive paste) Tomato and mushroom 150ml canned, flavoured tomato and onion mix 100g button mushrooms, sliced and fried
Method: 1.Prick the skin of the potatoes. For a soft potato rub the skin with cooking oil. For a crispy skin, rub with salt. 2.Place potatoes on the rack of an oven raosting pan and bake in a preheated oven at 200ºC for 30 – 45 minutes. 3.Cut a cross into each potato and press sides carefully to open up. Top with filling of choice and serve immediately.
