Ingredients: 1kg potatoes Salt to taste 2 eggs, lightly beaten 300g plain flour Pesto sauce Black olives, chopped Parmesan shavings
Method: 1.Place the potatoes in a medium saucepan, cover with water. Bring to the boil. Add salt, simmer until tender. 2.Drain, peel and mash until smooth. Add the eggs and most of the flour, mix until you have a soft dough. 3.Break off pieces, roll them into balls. Roll each piece down the prongs of a fork to give indentations for the sauce to stick to. 4.Bring a large pan of water to the boil, add salt, boil gnocchi until they rise to the surface. Remove with a slotted spoon. 5.Place in a serving dish. 6.Add the pesto, olives and parmesan.
