750g baby potatoes
1 bulb garlic, colves separated and peeled
1 large red onion, sliced
5ml curmin seeds
125ml olive oil
5ml coarse salt
60g chopped pecan nuts, toasted (optional) |
| Method: |
|
Cut slats into potatoes and place in oven roasting pan. Scatter onion and garlic over potatoes.
Drizzle olive oil over and sprinkle with cumin seeds and salt.
Bake in a preheated oven at 200ºC for 45 minutes or until tender.
Sprinkle with toasted nuts and serve. |
