Baby potatoes with blue cheese & caremalised onions

Ingredients: 750g baby potatoes Blue cheese coating: 125ml blue cheese, crumbled 250ml mascarpone cheese 50ml mayonnaise For caramalised onion: 2 onions, thinly sliced 30ml butter 15ml brown sugar 15ml port
Method: 1.Boil poatoes in salted water for 10 – 15 minutes or until tender. Drain 2.For blue cheese coating: Mix ingredients together and pour over potatoes. 3.For caramalised onions: Heat butter in a heavy-based frying pan, add onion and brown sugar and fry until onion is translucent. Add port and simmer for 2 minutes. Spoon potatoes and blue cheese into a serving bowl and top with onions.
