Ingredients: 3 medium potatoes, diced (360g) 6 – 8 small tomatoes 1 onion, chopped 1 tsp oil Flavoured salt and black pepper Origanum 3 eggs ¼ cup skimmed milk
Method: 1.Boil the potatoes in a small amount of water or microwave covered until done. 2.Place tomatoes in hot water for 1 minute, remove and peel. Cut in halves 3.Fry the onions in a nonstick pan. Add potatoes and brown. Place in a baking dish 4.Place tomato halves on top. 5.Mix eggs, milk and seasoning. Pour over potatoes. 6.Bake for 20 minutes (at 180ºC) or until egg mixture is set.
